COMFORT FOOD Made Fast and Healthy

Healthy dinner for two

Tired of leftovers when there are only two at the table? If so, be sure to give this delicious main dish a try. You’ll be glad you did!

CHICKEN CREOLE

1/2 cup chopped onion

1/2 cup chopped green bell pepper

1/2 cup thinly sliced celery

1 (8-ounce) can stewed tomatoes, undrained and finely chopped

1/4 cup reduced-sodium ketchup

1/2 teaspoon chili seasoning

1 cup diced cooked chicken breast

1 cup hot cooked rice

In a medium skillet sprayed with butter-flavored cooking spray, sauté onion, green pepper and celery for 6 to 8 minutes. Stir in undrained tomatoes, ketchup and chili seasoning. Add chicken. Mix well to combine. Lower heat, cover and simmer for 6 to 8 minutes, stirring occasionally. For each serving, place 1/2 cup rice on a plate and spoon about 1 cup chicken mixture over top. Serves 2. Freezes well.

¥ Each serving equals: 282 calories, 2 g fat, 30 g protein, 36 g carb., 352 mg sodium, 5 g fiber; Diabetic Exchanges: 3 Meat, 2 Vegetable, 1 1/2 Starch.
